Farm Updates:
As we mark the Winter Solstice this Saturday, it’s hard not to notice the relatively warm weather. Being able to step outside in lighter gear has been a small comfort, but it also serves as a reminder of the effects of climate change. It’s a good moment to reflect on the steps we can take to care for the planet. Supporting your local farm, for instance, is one of those meaningful actions that make a big difference.
This week, we’re featuring a flavorful and versatile herb: Leaf Celery. Also known as Cutting Celery. It offers a taste similar to regular celery but with its unique charm. Instead of the thick, crunchy ribs you might be used to, it grows thin stalks with abundant leafy tops, resembling parsley.
While related to parsley, Leaf Celery has a distinctive celery flavor that shines in recipes where you’d typically use celery. It’s wonderful in soups, chicken salad, holiday stuffing, or pasta dishes.
Since it’s a leafy herb, there’s no need to sauté it like traditional celery stalks. Simply toss it into cooked dishes at the end, mix it fresh into salads, or use it as a garnish. Try it on deviled eggs or sprinkled over roasted cabbage, like the recipe of the week linked above.
