Farm updates

Signs of spring abound, like garlic shoots making their way up through the protective layer of straw mulch, and crocuses blooming around the wash station! We are still biding our time for a few more days (hopefully not weeks), waiting for ideal soil conditions to get the ball rolling with field prep. We have learned through trial and error that it is better to wait for soil to dry on its own, creating a naturally tilthy and beautiful substrate, than to risk dealing with the negative effects of soil compaction, which can last for seasons. Even though we are eager to get as many crops as possible growing for the start of the CSA in May, the soil health comes first. We are laser focused right now on crop timing, though weather conditions are anything but predictable or reliable. And every plant great and small will have it’s moment to shine. Like this garlic, which will be growing up into scapes before we know it!

Recipes of the Week

Let us know in person or on Instagram what you make with your CSA share! We love to share photos of the meals that come out of the farm so send them our way! I personally am excited to try this parmesan crusted turnip fritter, and I’m still advocating for winter salads of fennel and citrus. And one of the most common ways I eat collard greens is for dinner with cheese grits and baked beans, so I’m looking forward to switching it up with black eyed peas instead. Have fun out there.
