Farm Updates:
Roads will be clear for normal CSA pickup on Saturday! Please only use the Old Marlboro Pike entrance - the Ritchie Marlboro Road entrance is not safe to drive on. Be patient while getting around; we have cleared as much snow as possible, but take care around other cars.

Onions, cabbage, kale, collards, and broccoli have all been seeded in the greenhouse and are getting extra layers of protection during these super low temperature nights! It feels great to have these early crops seeded on time, along with greenhouse and garage repairs we’ve made the past few weeks. This greenhouse is a greenhome now, if you will.

Apples and Radish Salad w Fennel

We hope it goes without saying that ingredients can be swapped around in recipes to suit what you have and what you like! Thinly sliced daikon or hakurei turnips could replace the baby pink radishes in the salad below, for example, or meat/dairy ingredients can be replaced with veg alternatives. Be bold and get to cooking!
Young tender celery heads are in the share this week, and while they are smaller than grocery-store size they are sweetened by the frosty weather (yes really!) and taste great. Don’t throw out those leafy tops—they are nearly identical to parsley and just as edible as the crunchy stem. Enjoy!
Fennel bulbs are also in the share this week, and serve an awesome role boosting background flavor of a dish and stretching a meal further. They are crunchy and sweet, with a licoricey flavor if eaten alone or shaved raw in a salad. That flavor mellows out significantly when roasted, so try mixing with other roasted veg, like sweet potatoes, turnips, and carrots, on a sheet pan. Or sauté it along with onion and garlic to start off a soup or tomato sauce. Fennel is in the same family as celery, parsley, and carrots, so think of it as that great aromatic starter to any delicious sauce, casserole, or broth.
