Recipes of the Week:

This week we are celebrating our first successful harvest of Brussels sprouts! These babies are tricky to get right. They are cold weather growers but take a long time to reach maturity, which means they need to be planted back in August and endure through the hot days. The five months of planning paid off though, and we are looking forward to roasting these Brussels sprouts with the SUPER frost-sweetened carrots for an awesome holiday meal. There’s also a recipe below for crispy fried potato latkes to try out this season!

Farm Updates:

The past two weeks between pickups have been filled with lots of meetings and lots of cold weather. We are getting our priorities in line, bundling up for outdoor work, and trucking away on our winter task list.

The winter solstice is Sunday, which is characterized by the shortest day and longest night of the year. What it means on a planetary scale is that Earth is tilted on its axis the farthest away from the Sun on that day, which makes the sunlit hours very few and the night very long. It is not necessarily the coldest day of the year, as winter weather and snowstorms can happen later, but it does mark the official start of winter. And from now until the Spring equinox in March, each day will have an increasing increments of daylight, making the “daytime” longer. Hard to believe right now, since it feels especially chilly, but we are now working back toward longer days. Lots to be thankful for in this period of reflection.
