Cheesy Summer Squash Pie
Summer quash has got a strong start in the field now and we are starting up the huge harvests! 800 pounds was picked this week already, with plenty more to come. It is the perfect tender size and is great in so many recipes. You will be seeing quite a bit more squash and zucchini of many varieties over the next three months, and I challenge everybody to enjoy it in as many unique forms as possible! Grilled, shredded into fritters, panko crusted and fried, stuffed and baked, sauteed, the list is very long indeed. Shout out to the CSA member who recommended baking a cheesy herby squash pie, and storing one away in the freezer to enjoy later into winter! You have the right idea.
Farm Notes:
This week we are highlighting Darryl from Shabach Ministries, who arrives at the wash station with an empty van every Monday morning and takes it back to the food bank loaded down with all kinds of awesome produce. This week he got a huge haul of summer squash, bok choi, chard, and other leafy greens! We love having a reliable outlet to move our big harvests and know that through their Mobile Markets and Grocery Giveaways, this local Organic produce is getting into the hands of our neighbors who can’t afford it otherwise. Heck yes! Thanks to all of you members who buy a share to help make that happen.
What’s on U-Pick?
There are many herbs and flowers now starting to be abundant in the U-pick fields! As a reminder, we have scissors hanging from the wash station posts- you are welcome to use them just please return them to their spots for the next person to use. We have a few jars available if you forget a jar and need one to transport your bouquet home. Feel free to ask a staff member for a jar or for advice on harvesting herbs! Some plants are abundant (dill, cilantro, parsley) and you can just snip at the base, three inches from the ground and they will grow back well. Others need their stems carefully trimmed from the outside in, leaving the smaller leaves to keep growing while you take the bigger stems (like basil, sorrel, flowers)!
Everything that is available for U-pick has a wooden sign labelling it. If you seen something you want to pick but it is unlabelled please leave it alone as we allow it to grow into maturity. Thanks and enjoy!
